  • Author: Tessa
  • Total Time: 75 minutes
  • Yield: 6 servings 1x

Description

This Ultimate Hobo Casserole recipe is the epitome of cozy dinners, bursting with hearty flavors and comforting textures. Layers of seasoned ground beef, tender potatoes, and gooey melted cheese make this casserole the definition of soul-warming food.

Ingredients

Scale
  • 1 pound lean ground beef (85% lean)
  • 4 medium-sized russet potatoes, peeled and thinly sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1/2 cup whole milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your 9×13-inch baking dish lightly with cooking spray or butter.
  2. Peel and thinly slice the potatoes into rounds, keeping the slices even for uniform cooking.
  3. Heat a large skillet over medium heat and add the ground beef. Break it apart with a spatula, cooking until browned, about 5-7 minutes. Drain any excess grease.
  4. Stir in the diced onion and minced garlic. Cook for another 2-3 minutes until the onion is soft and translucent. Remove the skillet from heat and set aside.
  5. In a mixing bowl, whisk together the cream of mushroom soup and milk until smooth. Season with salt, pepper, and paprika.
  6. Spread half of the sliced potatoes on the bottom of the prepared baking dish. Add half of the cooked ground beef and onion mixture evenly over the potatoes. Pour half of the soup mixture on top and sprinkle with 1 cup of shredded cheddar cheese.
  7. Add another layer with the remaining potatoes, ground beef mixture, and soup mixture. Top with the remaining 1 cup of shredded cheddar cheese.
  8. Pour the melted butter evenly over the top layer of cheese.
  9. Cover the casserole tightly with aluminum foil and bake in the preheated oven for 40 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the potatoes are fork-tender.
  10. Let the casserole rest for 5 minutes before cutting into portions. Serve warm and enjoy!

Notes

[‘Slice potatoes thinly for even cooking.’, ‘Season generously with salt, pepper, and paprika for enhanced flavor.’, ‘If potatoes are still firm after the recommended cooking time, cover the dish and bake for an additional 10-15 minutes.’, ‘Let the casserole rest for a few minutes after baking to make it easier to serve.’, ‘Customize the cheese with your favorites like Monterey Jack, Gouda, or Parmesan.’]
