- Large flour tortillas
- Shredded cheese (cheddar and Monterey Jack mix)
- 1 pound lean ground beef
- 1 packet taco seasoning
- 2–3 tablespoons water
- Cooked rice (white, brown, or cilantro lime rice)
- Canned black beans, rinsed and drained
- Sour cream or Greek yogurt
- Hot sauce (optional)
- Diced tomatoes
- Shredded lettuce
- Sliced avocado
- Cooking spray or oil
Instructions
- Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain any excess grease, then stir in the taco seasoning along with 2-3 tablespoons of water. Let it simmer for 2-3 minutes and set aside.
- In a bowl, mix the cooked rice with a dash of lime juice. Rinse and drain the black beans. Dice the tomatoes and slice the avocado.
- Lay a tortilla flat and spread a thin layer of sour cream in the center. Spoon a portion of seasoned beef over the sour cream, followed by rice, black beans, tomatoes, lettuce, and avocado slices. Add a drizzle of hot sauce if desired.
- Fold the sides of the tortilla inward over the fillings, then roll it tightly from the bottom up. Ensure all the fillings are snugly wrapped.
- Heat a non-stick skillet over medium heat and spray lightly with cooking spray or add a small amount of oil. Sprinkle shredded cheese directly onto the pan in a rectangle slightly larger than your burrito. Place the burrito seam-side down on top of the cheese.
- Let the cheese melt and form a crust, about 2-3 minutes. Carefully flip the burrito and cook the other side for an additional 2-3 minutes.
- Remove from the skillet, slice in half, and serve warm.
