  • 4 slices thick-cut bacon
  • 4 slices sharp cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1 tsp brown sugar
  • Pinch of cayenne pepper
  • 4 brioche burger buns
  • Butter for toasting buns
  • Optional toppings: lettuce, tomato, pickles

Instructions

  1. Combine 1 tsp garlic powder, 1 tsp smoked paprika, 1/2 tsp onion powder, 1 tsp brown sugar, and a pinch of cayenne in a small bowl to make the seasoning blend.
  2. In a large mixing bowl, gently combine 1 lb (450g) ground beef with half of the seasoning blend. Avoid overmixing.
  3. Divide the beef mixture into 4 equal portions and shape into patties about 3/4 inch thick. Press a small indentation in the center of each patty.
  4. Heat a skillet over medium heat and cook the bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain.
  5. Heat your grill or skillet over medium-high heat. Add the patties and cook for 3-4 minutes per side for medium doneness. Sprinkle the remaining seasoning blend on each patty as they cook.
  6. In the last minute of cooking, place a slice of cheddar cheese on each patty. Cover the pan or grill to help the cheese melt.
  7. Spread a thin layer of butter on the cut sides of the burger buns. Toast them on a griddle or skillet until golden brown.
  8. Assemble the burgers by placing the cooked patties with melted cheese on the bottom buns. Add bacon and any desired toppings, then cover with the top bun.
