- 3 pounds bone-in beef short ribs
- Salt and black pepper
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 2 medium carrots, chopped into bite-sized pieces
- 2 celery stalks, sliced thinly
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 cup dry red wine (e.g., Cabernet Sauvignon or Merlot)
- 2 cups low-sodium beef broth
- A few sprigs of fresh thyme or 1 teaspoon dried thyme
- 2 bay leaves
Instructions
- Season the ribs: Generously sprinkle salt and pepper on all sides of the beef short ribs.
- Sear the meat: Heat olive oil in a large Dutch oven over medium-high heat. Add the ribs in batches and sear until browned on all sides, about 3-4 minutes per side. Remove and set aside.
- Sauté the vegetables: Reduce heat to medium and add diced onion, carrots, and celery to the pot. Cook for 5 minutes or until softened. Stir in minced garlic and tomato paste, cooking for another 2 minutes.
- Deglaze the pot: Pour in the red wine and scrape the browned bits from the bottom of the pot. Let the wine simmer for 3 minutes to reduce slightly.
- Add the broth and herbs: Stir in beef broth, fresh thyme, and bay leaves. Return the ribs to the pot, making sure they’re submerged in the liquid.
- Braise: Cover the pot and transfer to a preheated oven at 325°F (160°C). Cook for 2.5 to 3 hours, or until the ribs are fork-tender.
- Finish the sauce: Remove the ribs from the pot and strain the liquid if desired. Simmer the sauce on the stovetop for 5-10 minutes to thicken.
- Serve: Plate the ribs and pour the sauce over the top. Garnish with fresh parsley if desired.
