- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) keto-friendly sweetener (e.g., erythritol or monk fruit)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
- Optional: Keto-friendly sprinkles, melted chocolate, or sugar-free royal icing for decorating
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine softened unsalted butter and keto-friendly sweetener. Use an electric mixer to cream them together until light and fluffy.
- Crack one large egg into the bowl and add vanilla extract. Mix until well combined.
- In a separate bowl, whisk together almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough seems too sticky, sprinkle in a little more almond flour, one tablespoon at a time.
- Place the dough between two pieces of parchment paper and roll it out to about 1/4-inch thickness. Use cookie cutters to create festive shapes. Remove the excess dough and re-roll as needed.
- Carefully place the cookies onto your lined baking sheet, spacing them about 1 inch apart.
- Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them to avoid overbaking.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a cooling rack to cool completely.
- Once cool, decorate with keto-friendly frosting, melted chocolate, or sprinkles as desired.
