Tasty Keto Almond Flour Sugar Cookies Perfect for Christmas

  • Author: Tessa

Description

These buttery, lightly sweetened keto almond flour sugar cookies are perfect for Christmas. Low-carb and gluten-free, they’re a guilt-free holiday treat everyone can enjoy.

Ingredients

Scale
  • 2 cups (240g) almond flour
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) keto-friendly sweetener (e.g., erythritol or monk fruit)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Optional: Keto-friendly sprinkles, melted chocolate, or sugar-free royal icing for decorating

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine softened unsalted butter and keto-friendly sweetener. Use an electric mixer to cream them together until light and fluffy.
  3. Crack one large egg into the bowl and add vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough seems too sticky, sprinkle in a little more almond flour, one tablespoon at a time.
  6. Place the dough between two pieces of parchment paper and roll it out to about 1/4-inch thickness. Use cookie cutters to create festive shapes. Remove the excess dough and re-roll as needed.
  7. Carefully place the cookies onto your lined baking sheet, spacing them about 1 inch apart.
  8. Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them to avoid overbaking.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a cooling rack to cool completely.
  10. Once cool, decorate with keto-friendly frosting, melted chocolate, or sprinkles as desired.

Notes

[‘Chill the dough for 20-30 minutes if it feels too soft to roll out.’, ‘Watch the oven closely as almond flour cookies bake quickly and can overbrown.’, ‘Use room temperature ingredients for a smoother dough.’, ‘Test your sweetener to ensure it doesn’t crystallize during baking.’]
