  • 1 pound (450g) ground beef
  • 4 tablespoons (60g) unsalted butter, melted
  • 2 teaspoons mitmita
  • 1 teaspoon korerima
  • 1 teaspoon salt
  • Fresh mint or basil, finely chopped (optional, for garnish)
  • Injera or flatbread for serving

Instructions

  1. In a large mixing bowl, combine 1 pound (450g) of ground beef with 1 teaspoon of salt. Mix gently but thoroughly to season the beef evenly.
  2. In a small skillet, melt 4 tablespoons (60g) of unsalted butter over low heat. Once melted, add 2 teaspoons of mitmita and 1 teaspoon of korerima. Stir continuously for 1-2 minutes until the spices bloom and become fragrant.
  3. Pour the spiced butter over the ground beef and mix well until the beef is evenly coated. At this point, you can serve the kitfo raw if you prefer the traditional preparation.
  4. To lightly cook the kitfo, heat a non-stick or cast-iron skillet over medium heat. Add the seasoned beef and cook for 3-5 minutes, stirring frequently. The beef should remain moist and slightly pink in the center.
  5. Taste and adjust the seasoning with additional salt or mitmita if needed. If you like it spicier, feel free to add more mitmita!
  6. Transfer the kitfo to a serving platter and garnish with fresh mint or basil.
  7. Serve warm with injera or your preferred flatbread. Enjoy!
