  • Author: Tessa
  • Total Time: 6 hours 15 minutes to 8 hours 15 minutes
  • Yield: 4 servings 1x

Description

This recipe combines tender beef bites, garlic butter, and hearty potatoes for the ultimate comfort food. Perfect for chilly days or busy weeknights, it’s flavorful and easy to prepare.

Ingredients

Scale
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1 lb baby potatoes, halved
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter, melted
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Start by cutting your beef chuck roast into 1-inch cubes. Halve the baby potatoes and mince the garlic.
  2. In a small saucepan, melt the butter over low heat. Stir in the minced garlic and cook for 1-2 minutes until fragrant, but not browned. Remove from heat.
  3. In a mixing bowl, combine the beef cubes with olive oil, Worcestershire sauce, Italian seasoning, salt, and pepper. Toss until evenly coated.
  4. Add the seasoned beef to the slow cooker. Scatter the halved potatoes on top, ensuring they’re evenly distributed.
  5. Pour the melted garlic butter over the beef and potatoes, ensuring everything is coated.
  6. Pour the beef broth into the slow cooker, which will keep the beef moist and infuse the potatoes with flavor.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours. The beef should be tender, and the potatoes should be easily pierced with a fork.
  8. Before serving, sprinkle chopped fresh parsley over the dish for a burst of color and flavor.

Notes

[‘Don’t skip the garlic butter as it adds rich flavor to the dish.’, ‘Stick to chuck roast for the best texture and flavor.’, ‘Layer the beef on the bottom and potatoes on top for even cooking.’, ‘Check the slow cooker periodically to avoid overcooking.’, ‘You can thicken the sauce by mixing 1 tablespoon of cornstarch with 2 tablespoons of water and adding it during the last 30 minutes of cooking.’]
