  • 1 pound beef tenderloin, trimmed and cut into small cubes
  • 8 ounces cremini mushrooms, finely chopped
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste
  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten

Instructions

  1. Start by heating your skillet over medium heat. Add the butter and let it melt.
  2. Once the butter is bubbly, add the finely chopped mushrooms and cook for about 5 minutes, stirring occasionally, until they release their moisture and start to brown.
  3. Add the minced garlic and thyme to the skillet, cooking for another 1-2 minutes until fragrant. Season with salt and pepper. Remove from heat and let cool for a few minutes.
  4. In a mixing bowl, add the cubed beef and the cooled mushroom mixture. Toss to combine, ensuring the beef is well coated with the mushroom flavor.
  5. Preheat your oven to 400°F while you prepare the pastry.
  6. Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick. Cut the pastry into 3-inch squares.
  7. Place a spoonful of the beef and mushroom mixture in the center of each pastry square.
  8. Fold the corners of the pastry over the filling to create a little pocket. Pinch the seams to seal tightly, making sure no filling escapes during baking.
  9. Place the filled pastries on the prepared baking sheet. Brush the tops with beaten egg for that golden finish.
  10. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed up. Keep an eye on them to ensure they don’t over-bake!
  11. Once they’re out of the oven, let them cool for a few minutes before serving.
