  • 1 pound Brussels sprouts, trimmed and halved
  • 6 slices bacon, chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the Brussels sprouts: Trim the ends and cut them in half. Set aside.
  3. In a large mixing bowl, toss the halved Brussels sprouts with olive oil, minced garlic, salt, and pepper until all are well coated.
  4. Spread the Brussels sprouts in a single layer on a large baking sheet.
  5. In a separate bowl, mix the chopped bacon with the Brussels sprouts, spreading it out evenly over the baking sheet.
  6. Roast in the preheated oven for about 20-25 minutes, stirring halfway through, until the Brussels sprouts are golden brown and crispy and the bacon is cooked through.
  7. If using balsamic vinegar, drizzle it over the Brussels sprouts during the last 5 minutes of roasting for extra flavor.
  8. Once cooked, remove from the oven and let cool for a minute before serving.

Notes

Make sure your Brussels sprouts are all about the same size for even cooking. If your baking sheet is too crowded, use two sheets.
