- 3 cups cooked, day-old white rice (jasmine or long-grain rice)
- 2 large eggs, whisked
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 tablespoons soy sauce (low-sodium optional)
- 1 teaspoon sesame oil
- 2 stalks green onions, chopped
- Salt and pepper to taste
- Optional add-ins: frozen peas, diced carrots, cooked chicken, shrimp, tofu, or any veggies
Instructions
- Prepare ingredients: chop green onions, mince garlic, and whisk eggs in a small bowl. Chop any extra veggies or proteins into bite-sized pieces.
- Heat 1 tablespoon of vegetable oil in a skillet or wok over medium-high heat. Scramble the whisked eggs for 1-2 minutes until just set. Remove eggs and set aside.
- Add the remaining tablespoon of vegetable oil to the skillet. Sauté minced garlic for 30 seconds until fragrant but not browned.
- Turn heat to high and add cooled, cooked rice to the skillet. Break up clumps and spread rice evenly. Stir-fry for 2-3 minutes until slightly crispy.
- Drizzle soy sauce and sesame oil over the rice. Stir well to coat evenly. Adjust seasoning with salt and pepper if needed.
- Fold scrambled eggs and chopped green onions into the rice. Add any extra ingredients like cooked chicken or vegetables and cook for another 2-3 minutes.
- Remove skillet from heat and serve immediately. Garnish with additional green onions or sesame seeds if desired.
