Instructions

  1. In a large mixing bowl, cream together 1 cup (225g) unsalted butter and 1 cup (200g) granulated sugar for 2-3 minutes until light and fluffy. Add 2 large eggs, 2 teaspoons pure vanilla extract, and 1 teaspoon almond extract. Mix until combined.
  2. In a separate bowl, whisk together 3 cups (375g) all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  3. Divide the dough into two disks, wrap them in plastic wrap, and refrigerate for at least 2 hours or overnight.
  4. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  5. On a floured surface, roll out one disk of dough to about 1/4-inch thickness. Use cookie cutters to cut out shapes and place them on prepared baking sheets.
