Instructions
- In a large mixing bowl, cream together 1 cup (225g) unsalted butter and 1 cup (200g) granulated sugar for 2-3 minutes until light and fluffy. Add 2 large eggs, 2 teaspoons pure vanilla extract, and 1 teaspoon almond extract. Mix until combined.
- In a separate bowl, whisk together 3 cups (375g) all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Divide the dough into two disks, wrap them in plastic wrap, and refrigerate for at least 2 hours or overnight.
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- On a floured surface, roll out one disk of dough to about 1/4-inch thickness. Use cookie cutters to cut out shapes and place them on prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are set but the centers are still soft. Don’t overbake—these cookies should not brown!
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Beat 1/2 cup (115g) softened butter until creamy. Gradually add 2 1/2 cups (300g) powdered sugar, 2-3 tablespoons milk or heavy cream, and 1 teaspoon vanilla extract. Mix until smooth and fluffy. Add food coloring if desired.
- Spread the frosting onto the cooled cookies using a spatula or piping bag. Add sprinkles for a festive touch.
