  • 2 large eggs, at room temperature

  • 1/3 cup coconut sugar (or brown sugar)
  • 1 1/2 cups gluten-free all-purpose flour (with xanthan gum)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chocolate chips (use dairy-free chocolate chips if needed)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a muffin tin or line it with paper liners.
  2. Peel and mash the bananas in a large mixing bowl until smooth (about 1 cup of mashed banana).
  3. Add the eggs, melted butter, coconut sugar, and vanilla extract to the mashed bananas. Whisk until fully combined and smooth.
  4. In a separate bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  6. Fold in the chocolate chips evenly.
  7. Use an ice cream scoop or spoon to divide the batter evenly among the muffin cups, filling each about 3/4 full.
  8. Bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove the muffin tin from the oven and let the muffins cool for about 5 minutes. Then transfer them to a wire rack to cool completely.
