Mediterranean Cauliflower Salad

Description

A vibrant and flavorful Mediterranean marinated cauliflower salad packed with wholesome veggies, olives, and sun-dried tomatoes. Perfect for light lunches, side dishes, or meal prep.


Ingredients

  • 1 medium head cauliflower, chopped into bite-sized florets
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 6 tablespoons olive oil, divided
  • 4 tablespoons lemon juice, freshly squeezed, divided
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and chop the cauliflower into bite-sized florets. Place them in a mixing bowl.
  3. In a small bowl, whisk together 3 tablespoons olive oil, 2 tablespoons lemon juice, 2 minced garlic cloves, and 1 teaspoon dried oregano. Add salt and pepper to taste.
  4. Pour the marinade over the cauliflower florets. Toss until well-coated, then let it sit for 10 minutes to soak up the flavors.
  5. Spread the marinated cauliflower evenly on the baking sheet and roast for 20-25 minutes, flipping halfway through, until tender and lightly browned.
  6. While the cauliflower is roasting, chop the cherry tomatoes, cucumber, red onion, and sun-dried tomatoes. Set aside.
  7. Once the cauliflower has cooled slightly, transfer it to a large bowl. Add the chopped veggies, Kalamata olives, and parsley.
  8. Whisk together another 3 tablespoons olive oil, 2 tablespoons lemon juice, and a pinch of salt and pepper. Drizzle over the salad and toss to combine.
  9. Sprinkle crumbled feta cheese (if using) on top before serving.
