Ingredients
- 2 lbs bone-in chicken thighs or drumsticks (skin-on for extra flavor)
- 3 tablespoons Jamaican curry powder
- 1 medium onion, finely chopped
- 2 stalks scallion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 Scotch bonnet pepper, finely chopped
- 2 medium potatoes, peeled and diced
- 2 large carrots, sliced
- 1 cup coconut milk
- 1 cup chicken stock
- 2 sprigs thyme (or 1 teaspoon dried)
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Rub the chicken with 2 tablespoons of Jamaican curry powder, salt, and pepper. Let it marinate for at least 30 minutes or up to overnight.
- Heat the vegetable oil in a large skillet or Dutch oven over medium heat. Add the onions, garlic, ginger, and scallions. Cook for 2-3 minutes until fragrant.
- Add the remaining tablespoon of Jamaican curry powder and Scotch bonnet pepper to the skillet. Stir and let it toast for 1 minute.
- Add the marinated chicken pieces to the skillet. Sear them on all sides until lightly browned, about 5 minutes.
- Pour in the chicken stock and coconut milk. Stir to combine, scraping up any browned bits from the bottom of the skillet.
- Stir in the diced potatoes, sliced carrots, and thyme. Bring the mixture to a simmer.
- Cover the skillet and let the curry simmer over low heat for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Taste the curry and add more salt or pepper if needed.
- Remove the thyme sprigs and serve the curry hot over steamed rice or with warm naan bread.
