- 1 cup (226 g) unsalted butter, softened
- Âľ cup (150 g) granulated sugar
- Âľ cup (150 g) brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 (3.4 oz) package pistachio pudding mix
- 2 ÂĽ cups (280 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- Optional: 1 cup white chocolate chips, chopped pistachios, or dried cranberries
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large mixing bowl, cream together 1 cup (226 g) of softened unsalted butter, Âľ cup (150 g) of granulated sugar, and Âľ cup (150 g) of brown sugar until light and fluffy. This should take about 2-3 minutes with a mixer.
- Add 2 large eggs one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
- In a separate bowl, whisk together 1 (3.4 oz) package of pistachio pudding mix, 2 ¼ cups (280 g) of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- If using mix-ins, fold in 1 cup of white chocolate chips, chopped pistachios, or other add-ons of your choice.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly soft—that’s okay!
- Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
