Ingredients

  • 1 pound sirloin steak, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons chopped parsley (optional)
  • Salt to taste
  • Pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Wash and halve the baby potatoes. Cut the sirloin steak into bite-sized pieces. Mince the garlic and chop the fresh parsley.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the potatoes, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until golden and fork-tender.
  3. Push the potatoes to one side of the skillet. Add the steak bites to the empty side, season with salt, pepper, and red pepper flakes (if using), and sear for 2-3 minutes per side until browned and cooked to your liking.
  4. Lower the heat to medium-low. Add the butter and minced garlic to the skillet, stirring until melted and fragrant. Toss the steak and potatoes in the butter sauce until well-coated.
  5. Sprinkle with fresh parsley for garnish and serve hot.

Notes

Don’t overcrowd the skillet when searing the steak bites to achieve a perfect crust. If your skillet is too small, cook the steak in batches. For a tangy twist, add a squeeze of lemon juice to the garlic butter sauce.
