  • 2 tablespoons chia seeds
  • 23 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • Optional: vanilla extract, cinnamon, or orange zest

Instructions

  1. Rinse the raspberries under cool water and gently pat them dry. If using frozen raspberries, let them thaw slightly before starting.
  2. Add the raspberries to a small saucepan and place it over medium heat. Stir occasionally until the raspberries begin to break down and release their juices, about 3-5 minutes.
  3. Add the honey or maple syrup to the saucepan. Start with 2 tablespoons and taste as you go—add more if you prefer a sweeter jam.
  4. Stir in the lemon juice to enhance the flavor and balance the sweetness.
  5. Reduce the heat to low and stir in the chia seeds. Mix well to ensure they’re evenly distributed. Let the jam simmer for 2-3 minutes, stirring constantly.
