- Fresh parsley, chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line your baking sheet with parchment paper or lightly grease it with oil for easy cleanup.
- In a large mixing bowl, combine the halved baby potatoes, olive oil, ranch seasoning, garlic powder, paprika (if using), salt, and pepper. Toss until the potatoes are evenly coated.
- Spread the seasoned potatoes out on the prepared baking sheet in a single layer. Ensure they have enough space to roast and crisp up.
- Add the sliced smoked sausage to the baking sheet, arranging them among the potatoes to meld flavors during cooking.
- Place the baking sheet in the preheated oven and bake for 30-35 minutes. Halfway through cooking, use tongs or a spatula to flip the potatoes and sausage for even browning.
- Check the potatoes for doneness by piercing them with a fork. They should be tender with crispy edges. If needed, bake for an additional 5 minutes.
- Once done, remove the baking sheet from the oven and let it cool for a couple of minutes. Sprinkle with fresh parsley before serving for a pop of color and flavor.
