  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup chicken or vegetable stock
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp sugar (optional)
  • Fresh cilantro, chopped (for garnish)
  • 1 cup jasmine rice
  • 2 cups water
  • 1/4 tsp salt

Instructions

  1. Rinse the mussels under cold water, removing any debris or beards. Discard any mussels that are cracked or wonโ€™t close when tapped.
  2. In a medium saucepan, combine the jasmine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let rest, covered, for another 5 minutes before fluffing with a fork.
  3. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and ginger, cooking for 1-2 minutes until fragrant.
  4. Stir in the red curry paste, cooking for 1 minute to release its flavors. Pour in the coconut milk and chicken stock, mixing well. Bring to a gentle simmer.
  5. Carefully add the cleaned mussels to the pot, stirring to coat them in the curry sauce. Cover the pot and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.
  6. Add the fish sauce, lime juice, and sugar (if using) to the curry sauce. Taste and adjust the seasoning as needed.
  7. Spoon the mussels and curry sauce over the cooked rice. Garnish with fresh cilantro and serve immediately.
