Ingredients

  • 2 cups cooked and shredded chicken breast
  • 1/2 cup buffalo sauce
  • Pizza dough (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup blue cheese crumbles (optional)
  • Ranch or blue cheese dressing for dipping
  • 2 tablespoons melted butter
  • 1/2 teaspoon garlic powder
  • Green onion, thinly sliced for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine 2 cups of shredded chicken with 1/2 cup of buffalo sauce. Mix until the chicken is fully coated.
  3. Roll out your pizza dough on a lightly floured surface into a rectangular shape, about 1/4-inch thick.
  4. Cut the dough into 3-inch squares using a knife or pizza cutter. You should get about 12-16 squares, depending on the size of your dough.
  5. Place a small spoonful of the buffalo chicken mixture in the center of each square. Add a pinch of shredded mozzarella cheese and blue cheese crumbles on top.
  6. Carefully fold each square into a ball, pinching the edges together to seal the filling inside.
  7. Place the pizza bites seam-side down on the prepared baking sheet, leaving a little space between each.
  8. In a small bowl, mix 2 tablespoons of melted butter with 1/2 teaspoon of garlic powder. Brush the tops of each bite with the garlic butter for extra flavor.
