A hearty one-pot dish combining tender turkey, nutty wild rice, and vegetables for a wholesome and comforting meal.
Ingredients

- 2 cups cooked turkey, shredded or diced
- 1 cup wild rice, rinsed and drained
- 4 cups chicken or turkey broth
- 2 medium carrots, diced
- 2 stalks celery, sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons butter or olive oil
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- Dice the carrots, celery, and onion, mince the garlic, and shred or dice the cooked turkey. Rinse and drain the wild rice.
- Heat butter or olive oil in a large pot or Dutch oven over medium heat. Add onion, garlic, carrots, and celery, and sauté for about 5 minutes until softened and fragrant.
- Add the wild rice to the pot and stir it into the vegetables. Cook for 2-3 minutes to lightly toast the rice.
- Pour in the chicken or turkey broth and bring the mixture to a simmer. Add thyme, salt, and pepper.
- Reduce heat to low, cover the pot, and cook for 45-50 minutes, or until the wild rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
- Once the rice is cooked, stir in the cooked turkey and let it warm through for about 5 minutes. Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley if desired.
