  • 6 cups peeled and sliced apples (use Granny Smith or Honeycrisp)
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 1/4 cup unsalted butter, softened
  • 3/4 cup Arborio rice
  • 4 cups whole milk (or almond milk for dairy-free)
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • Optional: raisins or chopped dried fruit

Instructions

  1. Spray the inside of your slow cooker with non-stick spray to prevent sticking.
  2. For Chocolate Lava Cake: In a mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt. Add milk, melted butter, and vanilla extract to the dry ingredients. Stir until well combined and smooth. Pour the batter into the slow cooker. Sprinkle chocolate chips evenly on top. In a separate bowl, mix the boiling water with 1/4 cup of cocoa powder and 1/2 cup sugar. Pour this mixture over the batter without stirring.   3. For Apple Crumble: In a bowl, toss the apple slices with cinnamon, nutmeg, and lemon juice. Spread the seasoned apples evenly in the slow cooker. For the crumble topping, mix flour, oats, brown sugar, and butter in a bowl until crumbly. Sprinkle the crumble mixture evenly over the apples. Cover and cook on low for 4-5 hours, or until the apples are tender and the topping is golden brown. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
  4. For Rice Pudding: Rinse the Arborio rice in cold water and drain well. In your slow cooker, combine the rice, milk, sugar, vanilla extract, cinnamon, and salt.
