Ingredients

  • Large mushrooms (12-15, cleaned and stems removed)
  • Cream cheese (8 oz, softened)
  • Parmesan cheese (1/2 cup, grated)
  • Garlic (2 cloves, minced)
  • Fresh parsley (2 tbsp, chopped)
  • Italian seasoning (1 tsp)
  • Salt (to taste)
  • Pepper (to taste)
  • Olive oil (1 tbsp, for drizzling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms gently with a damp cloth to remove any dirt. Remove the stems and set them aside.
  3. In a mixing bowl, combine the softened cream cheese, grated Parmesan cheese, minced garlic, chopped parsley, Italian seasoning, salt, and pepper. Mix until well combined and creamy.
  4. Chop the mushroom stems finely and add them to the filling mixture.
  5. Using a teaspoon, fill each mushroom cap with the cheese mixture, pressing down gently to pack it in.
  6. Place the stuffed mushrooms on a baking sheet lined with parchment paper.
  7. Drizzle a little olive oil over the top of the stuffed mushrooms.
  8. Bake in the preheated oven for about 20-25 minutes, or until the tops are golden and the mushrooms are tender.
  9. Remove from the oven and let them cool for a few minutes before serving.

Notes

You can prepare the stuffed mushrooms in advance and keep them in the fridge for a few hours before baking. Just add a few extra minutes to the bake time.
