Ingredients
- Large mushrooms (12-15, cleaned and stems removed)
- Cream cheese (8 oz, softened)
- Parmesan cheese (1/2 cup, grated)
- Garlic (2 cloves, minced)
- Fresh parsley (2 tbsp, chopped)
- Italian seasoning (1 tsp)
- Salt (to taste)
- Pepper (to taste)
- Olive oil (1 tbsp, for drizzling)
Instructions
- Preheat your oven to 375°F (190°C).
- Clean the mushrooms gently with a damp cloth to remove any dirt. Remove the stems and set them aside.
- In a mixing bowl, combine the softened cream cheese, grated Parmesan cheese, minced garlic, chopped parsley, Italian seasoning, salt, and pepper. Mix until well combined and creamy.
- Chop the mushroom stems finely and add them to the filling mixture.
- Using a teaspoon, fill each mushroom cap with the cheese mixture, pressing down gently to pack it in.
- Place the stuffed mushrooms on a baking sheet lined with parchment paper.
- Drizzle a little olive oil over the top of the stuffed mushrooms.
- Bake in the preheated oven for about 20-25 minutes, or until the tops are golden and the mushrooms are tender.
- Remove from the oven and let them cool for a few minutes before serving.
Notes
You can prepare the stuffed mushrooms in advance and keep them in the fridge for a few hours before baking. Just add a few extra minutes to the bake time.
