  • 1/2 cup (60g) powdered sugar
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup (120g) finely chopped nuts (pecans, walnuts, or almonds)
  • Additional powdered sugar for coating

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or use silicone baking mats.
  2. In a large mixing bowl, cream together 1 cup (230g) of softened unsalted butter and 1/2 cup (60g) of powdered sugar until light and fluffy (about 2-3 minutes using an electric mixer).
  3. Add 2 teaspoons of vanilla extract and mix until well combined.
  4. In a separate bowl, whisk together 2 cups (250g) of all-purpose flour and 1/4 teaspoon of salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low speed until fully incorporated. The dough will be crumbly but should hold together when pressed.
  6. Fold in 1 cup (120g) of finely chopped nuts of your choice. Ensure the nuts are evenly distributed throughout the dough.
  7. Using your hands, roll the dough into small balls, approximately 1-inch in diameter. Place them on the prepared baking sheets, leaving about 1 inch of space between each cookie.
  8. Bake in the preheated oven for 10-12 minutes, or until the bottoms are lightly golden. The tops should not brown.
  9. Remove the cookies from the oven and let them cool for 5 minutes on the baking sheets. Then, transfer them to a cooling rack.
  10. Once the cookies are cool enough to handle but still slightly warm, roll each one in powdered sugar until fully coated. For an extra snowy look, roll them a second time after they’ve cooled completely.
