- 1/2 cup brown sugar

- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg

- 1 cup chocolate chips or nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the pumpkin puree, egg, and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and spices (cinnamon, nutmeg, ginger, and salt).
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
- If using, gently fold in chocolate chips or nuts into the dough.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto your prepared baking sheets, spacing them about 2 inches apart.
- Place the cookies in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden and the centers look set.
- Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough in the fridge for about 30 minutes before baking.
