Adorable vegan blueberry ghost hand pies with flaky pastry and sweet blueberry filling, perfect for Halloween festivities.

- 2 ½ cups all-purpose flour
- 1 cup vegan butter, chilled and cubed
- 1 tsp salt
- 6–8 tbsp ice water
- 2 cups fresh or frozen blueberries
- ⅓ cup granulated sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- Vegan chocolate chips (for the ghost eyes)
- Almond milk or coconut milk (for brushing the pastry)
- Sprinkle of sugar (optional, for a sparkly finish)
Instructions
- In a large mixing bowl, combine the flour and salt. Add the chilled vegan butter and use a pastry cutter or your fingers to cut it into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, until the dough comes together. Wrap the dough in plastic wrap and chill for 30 minutes.
- In a small saucepan, combine the blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring frequently, until the mixture thickens. Let it cool completely.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about ⅛ inch thick. Use a ghost-shaped cookie cutter to cut out pairs of ghost shapes.
- Place a spoonful of blueberry filling in the center of one ghost cutout. Place another ghost cutout on top, and use a fork to crimp the edges together to seal.
- Use vegan chocolate chips to create eyes for your ghost. Brush the tops of the pies with almond or coconut milk and sprinkle with sugar if desired.
- Transfer the pies to the lined baking sheet and bake for 20-25 minutes, or until the edges are golden brown.
- Allow the pies to cool for 10-15 minutes before serving.
