Ingredients

  • 8 cups fresh spinach (or 1 pound), chopped and cooked
  • 1 cup crumbled feta cheese
  • 8 ounces cream cheese, softened to room temperature
  • 1 cup sour cream (or Greek yogurt)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • Salt and pepper to taste
  • Optional: A pinch of nutmeg or red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish lightly with cooking spray or olive oil.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent. Stir in minced garlic and cook for another minute.
  3. Add chopped spinach to the skillet and cook until wilted, stirring occasionally, about 3-5 minutes. If using frozen spinach, ensure it’s fully thawed and press out excess water before adding.
  4. Remove skillet from heat and let the spinach mixture cool slightly.
  5. In a large mixing bowl, combine softened cream cheese, sour cream, crumbled feta cheese, and a pinch of salt and pepper. Mix until smooth and creamy.
  6. Fold the cooled spinach mixture into the cheese mixture. For a smoother texture, transfer everything to a food processor and blend for a few seconds.
  7. Pour the mixture into the prepared baking dish and spread evenly. Sprinkle additional crumbled feta on top.
  8. Bake for 15-20 minutes, or until the top is slightly golden and the edges are bubbly.
  9. Remove from the oven and let cool for 5 minutes before serving.
