  • 6 ounces fresh crab meat (or canned crab meat, drained)
  • 4 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 teaspoon lemon juice
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Clean the mushroom caps by gently wiping them with a damp paper towel. Remove the stems and chop them finely.
  3. In a large mixing bowl, combine the chopped mushroom stems, crab meat, softened cream cheese, mayonnaise, Parmesan cheese, minced garlic, chopped green onions, and lemon juice. Season with salt and pepper. Stir until smooth and well combined.
  4. Using a small spoon, scoop the creamy crab mixture into each mushroom cap, filling generously.
  5. In a small bowl, mix the panko breadcrumbs with melted butter. Sprinkle the mixture over each stuffed mushroom.
  6. Place the stuffed mushrooms on the prepared baking sheet, spacing them evenly. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden and bubbly.
  7. Remove from the oven and let cool for a few minutes. Sprinkle with freshly chopped parsley before serving.
