- 6 ounces fettuccine or any pasta of your choice (spaghetti, penne, or linguine)
- 2 small chicken breasts, sliced thinly
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup parmesan cheese, freshly grated
- ÂĽ cup chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve ½ cup of pasta water, then drain and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken slices with salt, pepper, and half of the Italian seasoning. Add the chicken to the skillet and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the pan and set aside.
- In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 1-2 minutes until fragrant, stirring frequently to prevent burning.
- Add the heavy cream and chicken broth to the skillet, stirring to combine. Bring to a gentle simmer, then whisk in the parmesan cheese until melted and smooth. Add the remaining Italian seasoning and adjust salt and pepper to taste.
- Return the chicken to the skillet and coat in the sauce. Add the cooked pasta and toss everything together, using the reserved pasta water to loosen the sauce if needed.
- Remove from heat and sprinkle with fresh parsley. Serve immediately with a side of garlic bread or a crisp green salad.
