Ingredients
- 1 pound lean ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- Salt, to taste
- Pepper, to taste
- Optional seasonings: paprika, garlic powder, Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
- Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks, about 7-8 minutes. Drain any excess grease.
- Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes, or until the onion becomes translucent and fragrant.
- Stir in the frozen mixed vegetables and cook for another 3 minutes. No need to thaw the veggies—they’ll cook perfectly in the oven.
- In a mixing bowl, combine the cream of mushroom soup, sour cream, and half of the shredded cheddar cheese. Season with salt, pepper, and any additional seasonings you like.
- Transfer the cooked beef and vegetable mixture to the prepared baking dish. Spread it out evenly.
- Pour the creamy soup mixture over the beef and vegetables, spreading it in an even layer.
- Top with the frozen tater tots, arranging them in a single layer for even cooking and crispiness.
- Sprinkle the remaining shredded cheddar cheese over the tater tots.
- Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy, and the filling is bubbling.
