  • Author: Tessa
  • Total Time: 50 minutes
  • Yield: 6 servings 1x

Description

A hearty and comforting dish featuring crispy tater tots, creamy filling, and savory ground beef—perfect for family dinners or potlucks.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • Salt, to taste
  • Pepper, to taste
  • Optional seasonings: paprika, garlic powder, Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks, about 7-8 minutes. Drain any excess grease.
  3. Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes, or until the onion becomes translucent and fragrant.
  4. Stir in the frozen mixed vegetables and cook for another 3 minutes. No need to thaw the veggies—they’ll cook perfectly in the oven.
  5. In a mixing bowl, combine the cream of mushroom soup, sour cream, and half of the shredded cheddar cheese. Season with salt, pepper, and any additional seasonings you like.
  6. Transfer the cooked beef and vegetable mixture to the prepared baking dish. Spread it out evenly.
  7. Pour the creamy soup mixture over the beef and vegetables, spreading it in an even layer.
  8. Top with the frozen tater tots, arranging them in a single layer for even cooking and crispiness.
  9. Sprinkle the remaining shredded cheddar cheese over the tater tots.
  10. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy, and the filling is bubbling.
  11. Let the casserole cool for about 5 minutes before serving. Enjoy!
