  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

A hearty and satisfying casserole featuring creamy mashed potatoes, tender chicken, and melted cheese, perfect for busy weeknights or cozy family dinners.

Ingredients

Scale
  • 4 cups mashed potatoes
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 3 cups cooked chicken, shredded or diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
  • 1 can cream of chicken soup (10 oz)
  • 1/4 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your casserole dish lightly with cooking spray or butter.
  2. Prepare the mashed potatoes: In a large bowl, combine mashed potatoes, softened butter, milk, garlic powder, salt, and pepper. Mix until smooth and creamy.
  3. Prepare the chicken layer: In a separate bowl, mix the shredded chicken, frozen vegetables, cream of chicken soup, sour cream, onion powder, and paprika. Make sure everything is evenly coated.
  4. Layer the casserole: Spread the chicken mixture evenly into the bottom of the greased casserole dish. Top with the mashed potatoes, spreading them gently over the chicken layer.
  5. Add the cheesy topping: Sprinkle shredded cheddar cheese evenly over the mashed potatoes. In a small bowl, toss breadcrumbs with melted butter, then spread them on top of the cheese for a crispy finish.
  6. Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the breadcrumbs are golden brown.
  7. Let the casserole cool for 5 minutes before serving. Enjoy!

Notes

[‘Use rotisserie chicken for convenience.’, ‘Taste and adjust seasoning before assembling.’, ‘Cover with foil for the first 15 minutes of baking to prevent breadcrumbs from burning.’, ‘Experiment with different cheeses or add crumbled bacon for extra flavor.’]
