- 2 boneless, skinless chicken breasts, cooked and shredded
- 16 ounces potato gnocchi
- 1 lemon, zest and 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh baby spinach
- Salt and pepper, to taste
Instructions
- Season chicken breasts with salt and pepper and cook in a skillet over medium heat with 1 tablespoon of olive oil for 5-7 minutes per side until golden and fully cooked. Remove, let cool slightly, and shred using two forks.
- Bring a pot of salted water to a boil and cook gnocchi per package instructions (usually 2-3 minutes). Drain and set aside.
- In the same skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and cook until fragrant, about 1-2 minutes.
- Pour 1 cup of chicken broth into the skillet and bring to a simmer. Add 1 cup of heavy cream and stir to combine. Let the mixture bubble gently for 2-3 minutes until slightly thickened.
- Stir in the zest of one lemon and 2 tablespoons of fresh lemon juice. Taste and adjust with more lemon juice if desired.
- Add shredded chicken and cooked gnocchi into the skillet, stirring to coat everything in the sauce. Let it simmer for 2-3 minutes.
- Add 2 cups of fresh spinach and stir until it wilts, about 1-2 minutes.
- Sprinkle 1/2 cup of freshly grated Parmesan cheese over the top, stirring until melted and well incorporated. Season with salt and pepper to taste.
- Serve immediately while warm and creamy. If the sauce thickens too much, loosen it with a splash of chicken broth or water.
