  • 2 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 cloves minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Slice the sausage into bite-sized pieces, mince the garlic, and rinse the spinach leaves. If using frozen tortellini, let it thaw slightly.
  2. Heat a skillet over medium heat, add a drizzle of olive oil, and brown the sausage pieces for about 5-7 minutes.
  3. Transfer the browned sausage to your crockpot and add the marinara sauce, chicken broth, minced garlic, and Italian seasoning. Stir well to combine.
  4. Set your crockpot to low and cook for 4-5 hours, stirring occasionally if possible.
