  • 2 cups diced Yukon gold or russet potatoes
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika (optional)
  • Salt and pepper, to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • 3 tbsp olive oil
  • Optional: bell peppers, peas, or spinach

Instructions

  1. Dice the potatoes into small cubes, chop the onion, mince the garlic, and shred the cheese. Gather all ingredients.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until golden brown and tender. Remove and set aside.
  3. In the same skillet, add another tablespoon of olive oil if needed. Cook the chopped onion until translucent (about 3-4 minutes), then add the minced garlic and cook for another 30 seconds, stirring frequently.
  4. Add the ground beef to the skillet and cook, breaking it up with a spatula, until fully browned and no longer pink (about 5-7 minutes). Season with paprika, salt, and pepper.
  5. Return the cooked potatoes to the skillet and stir them with the beef mixture until well combined.
  6. Sprinkle the shredded cheese evenly over the top of the mixture. Cover the skillet with a lid and let the cheese melt over low heat for 3-5 minutes.
  7. Once the cheese is melted and bubbly, remove the skillet from the heat. Garnish with fresh herbs like parsley or chives if desired, and serve hot.
