  • 1 lb smoked sausage, sliced into bite-sized pieces
  • 1 cup shredded cheese (e.g., cheddar, pepper jack, mozzarella)
  • Chopped parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  2. In a mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, 2 tablespoons of ranch seasoning mix, and a pinch of salt and pepper. Make sure the potatoes are evenly coated.
  3. Spread the seasoned potatoes out on the prepared baking sheet in a single layer. Roast in the oven for 20 minutes.
  4. While the potatoes are cooking, slice the smoked sausage into bite-sized pieces. Set aside.
  5. At the 20-minute mark, remove the baking sheet from the oven and give the potatoes a good toss. Add the sausage pieces to the baking sheet, spreading them out evenly among the potatoes.
  6. Place the baking sheet back in the oven and roast for another 15 minutes, or until the potatoes are golden brown and crispy, and the sausage is heated through.
  7. Sprinkle 1 cup of shredded cheese evenly over the potatoes and sausage. Return the baking sheet to the oven for 5 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes. Garnish with chopped parsley, if desired, and serve warm.
