Ingredients

  • 3 cups (375g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 cup (240ml) whole milk
  • 1 teaspoon vanilla extract
  • 5 different food colorings (gel works best for vibrant hues)
  • 1 cup (240ml) heavy cream
  • 8 ounces (225g) cream cheese, softened
  • 1/2 cup (60g) powdered sugar
  • 1 teaspoon vanilla extract
  • Sprinkles (optional)
  • Edible glitter (optional)
  • Fruit slices (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pans. Line the bottoms with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream the butter and sugar until light and fluffy. This takes about 3 minutes with an electric mixer.
  4. Beat in the eggs one at a time, making sure each is fully incorporated before adding the next.
  5. Mix in the vanilla extract and then alternate adding the dry ingredients and milk to the wet mixture. Start and end with the dry ingredients.
  6. Divide the batter evenly into five bowls. Add a few drops of food coloring to each bowl and mix until the color is uniform.
  7. Pour each colored batter into its own prepared cake pan and spread evenly. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in their pans for 10 minutes, then transfer them to a wire rack to cool completely.
  9. While the cakes are cooling, make the frosting. Beat the cream cheese until smooth, then add the powdered sugar and vanilla. Slowly pour in the heavy cream while mixing until stiff peaks form.
  10. Once the cakes are cool, stack them with a layer of frosting between each. Be generous—it’s the glue that holds the whimsical layers together!
  11. Frost the outside of the cake and decorate with sprinkles, edible glitter, or fruit slices.
